What is Potassium Sorbate?

Potassium sorbate is a salt mainly used as a food preservative. It is also known as the potassium salt of sorbic acid (E number 202). The molecular formula is C6H7O2K and the scientific name is (E,E)-hexa-2,4-potassium dienoate. Potassium sorbate is used in a variety of applications, including food, wine and personal care.

What is Potassium Sorbate used for?

Potassium sorbate is used for preserving empanadas, pastas, pre-pizzas, frozen pizzas, tomato sauce, margarine, cheese spreads, fillings, yogurt, juices, dried fruits, sausages, wines, etc.

This compound should not be used in products whose preparation involves fermentation, as it slows down the growth of yeasts and other types of mold. It also slows down the growth of bacteria.

When using combinations of Potassium Sorbate with other preservatives, care should be taken not to introduce calcium ions as precipitation occurs. Therefore, use sodium propionate and not calcium in combination with potassium sorbate for optimal synergistic effect.
